Great protagonist of the Italian sparkling wine art, Prosecco is widely obtained from Glera grapes widespread in the Treviso area. Following the enormous and uncontrolled expansion of recent years, a new resolution has come into force in 2009 to limit the production of Prosecco DOC to the provinces of: Treviso, Venice, Vicenza, Belluno, Padua, Trieste, Gorizia, Udine and Pordenone with the right purpose of safeguarding an oenological heritage appreciated all over the world.

The grapes from our lands can give this wine greater structure than the one produced in the hills, making it even more versatile when paired with the typical recipes of region. The sparkling version is the original one, since this wine was born in the cellars of the farmers from spontaneous fermentation.

WINEMAKER NOTES:
The soft pressing of whole grapes is followed by fermentation with yeasts at a constant temperature of 15-16 °C; second fermentation takes place according to the Charmat method, with re-fermentation for approximately 30 days in autoclaves.

TASTING NOTES:
Colour: pale straw yellow with greenish reflections
Nose: fruity nose with hints of apple and peach
Taste: tingly dry & fruity palate

Food pairing: ideal as an aperitif, accompanies perfectly fish and shellfish recipes
Serving temperature: 6-8°C
