PRODUCTION METHOD:
Slightly bitter chicory variety cut into small pieces and left to steep in alcoholic solution (50%-60% vol.) for about 90 days. Gently pressed, filtered and added with alcohol and sugar

TASTING NOTES:
Colour: dark and deep red with garnet reflections
Nose: Radicchio Rosso di Treviso typical fragrancy, spicy scents reminding dandelions and rhubarb
Taste: pleasant equilibrium between the sweetness of Radicchio leafs and the bitter spicy note originated by Radicchio roots
SOMMELIER NOTES:
Pairing: ideal as a post-meal digestif, as its organoleptic properties stimulate and support digestion
Serving temperature: 8°C with ice, perfect in the On The Rocks glass
