This prized vegetable, known for its distinctive elongated leaves and pleasantly bitter taste, is processed using techniques passed down through generations, enhancing its crisp texture and aromatic intensity. Its natural tonic-bitter notes are also expressed in Amaro San Nicolò, where the infusion of radicchio imparts purifying and antioxidant properties, enriching the liqueur with a refined and distinctive aromatic complexity.

PRODUCTION METHOD:
Slightly bitter chicory variety cut into small pieces and left to steep in alcoholic solution (50%-60% vol.) for about 90 days. Gently pressed, filtered and added with alcohol and sugar
